Ingredients
1/4 cup bacon fat (about two strips of thick cut bacon give you enough fat)
1/4 cup onion, diced
2 cups ketchup
1/4 cup and 2 T Worcestershire sauce
1/4 cup and 1 T molasses
1 T tobasco
1 tsp garlic salt
1/4 cup lemon juice (2 lemons)
1 T black pepper
1 tsp garlic powder
1 1/2 tsp smoked salt
1 tsp kosher salt
1 T brown sugar
1. In a sauce pan over medium heat add chunks of bacon to render out the fat
2. Once you have cooked the bacon, remove the meat and save the fat in the sauce pot
***TIP: my dogs just got a great treat with the bacon I’m not using
3. Now sauté the onions in the bacon fat until they are soft and translucent
4. When the onions are finished cooking add ketchup, Worcestershire sauce, molasses, tobasco, garlic salt, lemon juice, black pepper, garlic powder, kosher salt, smoked salt, and brown sugar.
5. Whisk all ingredients so they are mixed thoroughly
6. Now bring sauce to a boil, at about medium high heat
7. Once your BBQ sauce has hit a boil reduce to medium low heat or to a simmer for about 20-30 minutes. Your goal is to reduce the sauce and really intensify the flavors
8. Once reduced, remove the pan from the heat and let the sauce cool before placing into a storage container
9. The sauce should last about 1 week
