Changing up your food "playbook"

Texas Caviar

 

Cooking Time 15 Minutes; Yields 6-8 People

Ingredients
16 oz can black beans, drained and rinsed
16 oz can black eyed peas, drained and rinsed
12 oz can sweet corn whole kernels, drained and rinsed
10 oz can original rotel, don’t strain use the juice for a sauce
1 red bell pepper, diced
1 green bell pepper, diced
1/2-1 poblano pepper, diced
1 red onion, diced
1 bundle cilantro, chopped
1/2 lime, juiced
1/2-1 tsp garlic salt
1-1 1/2 tsp kosher salt
1-2 T olive oil
1 tsp cumin

Cooking Instructions


1. Find a large bowl to mix ingredients in.
2. Strain and rinse black beans, black eyed peas, and sweet corn then place into the large  mixing bowl
3. Open the Rotel and pour the entire can, including the juice, over the beans and corn
4. Dice the red bell pepper, green bell pepper, poblano pepper, purple onion, and cilantro.  Place all the ingredients into the mixing bowl with the beans.
4. Add olive oil, garlic salt, kosher salt, lime juice, and cumin to the mixing bowl.  A quick tip is to not over salt the mixture because you can always add more salt vs you can’t take it away once added to the mixture
5. Mix thoroughly and serve with chips for guests or with chips and queso for over the top nachos
6. Enjoy!!!
***TIP: Food Should Taste Good have all natural tortilla chips made with stone ground yellow corn, brown rice, fax seed, sesame seed, and quinoa
