Steak and Blue Cheese Salad

Steak and Blue Cheese Salad

 

Cooking Time 20 Minutes; Yields 3-4 People

Ingredients
1 head romaine lettuce, chopped
1/2 cup dried cranberries
blue cheese, crumbled
1 pound top round, seared, stripped, and diced
balsamic dressing
baguette, cut into sections

Cooking Instructions

1. Heat the oven to 350 degrees F
2. Start by heating a cast iron skillet on medium high heat.
3. Add a little bit of olive oil to the cast iron skillet so the steak won’t stick to the pan
4. Salt and pepper both sides of the steak and add to the hot cast iron
5. Cook each side of the steak about 30 seconds on each side (because it is a thin piece of meat) to sear all the juices in.  Then place the cast iron in the oven to finish cooking
6. Remove the steak from the oven once the internal temp has his 135 degrees F.  Let it rest for 10 minutes before slicing and dicing the steak

7. While the steak rests you can clean and chop your lettuce, dice onion, and crumble the blue cheese  ***TIP: I buy a chunk of blue cheese and chop my own crumbles, it’s cheaper

 

8. Once your cubes of steaks have cooled it is time to build your salad

9. Add lettuce, blue cheese, dried cranberries, onion, and steak to a large bowl.  Dress it with a balsamic dressing
***TIP: sometimes I don’t feel like making a dressing so here is a good store bought dressing

10. Plate and serve with a piece of baguette

11. Enjoy!!!
