A New Mix On An Old Classic, Fruit Salad

4th of July Fruit Salad

Cooking Time 10 Minutes; Yields 8-10 People

Ingredients
2 white peaches, chopped
2 “regular” yellow peaches, chopped
2 red plums, chopped
2 white nectarines, chopped
1 cup blueberries
1 cup strawberries, quartered
1 green apple, chopped
1 plantain, pealed and chopped….or….1 banana, pealed and chopped
***(I challenge you to try the plantain and don’t knock it until you at least try it!)

(See plantains aren’t too scary, it looks like a banana)

1 lime, juiced (so the fruit doesn’t change color)
1/4 cup powder sugar

Cooking Instructions

1. Wash and cut up all fruit; add to a large mixing bowl
2. Once all the fruit is cup up, half the lime and squeeze all the juice over the fresh fruit.  This allows the fruit to keep all the fresh color if you decided to make the fruit salad ahead of time.  It also add another layer of freshness in the salad
3. Finally add the powder sugar over the fresh fruit.  This will thicken your natural juices of the salad and help calm down any sour tastes from the fruit.  Mix well so all the fruit is coated with the lime juice and powder sugar.

4. Let it chill for at least 15 minutes or make a couple hours ahead of time if you are entertaining (pre planning sides before your guests arrive makes your life soooo much easier!)
5. Enjoy!!!

God Bless America, Happy 4th of July!!!
