Ingredients
Bars
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
2 cups sugar
4 eggs
2 cups pumpkin
1 cup veggie oil
Cream Cheese Frosting
6 oz cream cheese, room temperature
1 1/2 stick butter, room temperature
2 tsp milk
2 tsp vanilla
3 1/2 cup powdered sugar
Bars
1. Heat oven to 350 degrees, butter and flower your cake pan
2. Combine all dry ingredient in one bowl (flour, baking powder, baking soda, cinnamon)
3. In your mixer on medium speed add sugar, eggs, pumpkin, oil and mix until combined
4. Slowly add your dry mixture to your wet mixture on a low speed
5. Once combined, add pumpkin bar mixture to your cake pan. Bake until the center is firm and the sides pull away from the pan
Frosting
1. On medium to medium high speed, cream together cream cheese and butter until combined
2. Reduces speed on the mixer to medium low, add milk, vanilla, and powdered sugar.
3. Enjoy!!!
***TIP: place toothpicks into the cake when storing so the frosting doesn’t stick to the plastic wrap (grandma tips 101)
