Ingredients
1.5-2 pounds ground hamburger
46 oz tomato juice
3 cans chili beans, drained and rinsed (New Jersey doesn’t sell chili beans so use pinto beans, they are the same thing. Don’t panic like I did when I couldn’t find them!)
2 can dark kidney beans, drained and rinsed
1 package chili seasoning
15 oz can diced tomatoes
2-4 T chili powder (or for as hot as you like)
1 onion diced
1-4 jalapeños dices and seeded
1 T olive oil
Salt and pepper to taste
1. In a sauté pan on medium heat add olive oil, diced onion, and jalapeños to sauté for 1-2 minutes
2. Add ground hamburger to onion and jalapeño mixture and cook until browned . Salt and pepper hamburger to taste
3. While your hamburger is browning, place your crockpot on high and pour in tomato juice, chili beans (pinto beans), dark kidney beans, chili seasoning package, diced tomatoes
4. Once hamburger mixture is finished cooking, strain and add to the crock pot
5. Add 1-2 T chili powder to the crock pot stir everything until it is mixed thoroughly
6. Place lid on crock pot and cook for 1 hour, come back and taste to see if you want to add more chili powder
7. After first hour of chili cooking on high, place crock pot on low heat and it will stay warm all day
***Tip: to thicken chili, mix together 2 T cornstarch and just enough water to mix the cornstarch into a liquid form. Pour into chili, and become amazed!!!
