Spicy Marinara Sauce with Cheese Stuffed Meatballs

 

Cooking Time 3 Hours; Yields 6-8 People

Ingredients
Spicy Marinara Sauce
28 oz can crushed tomatoes
28 oz can whole tomatoes
28 oz can tomato puree
2; 15 oz cans tomato sauce
6 oz can tomato paste
6 garlic cloves, minced
3 bay leaves
1-2 T dried oregano
1-2 T dried basil
1-2 T salt
1 tsp black pepper
1 pound ground spicy italian sausage
1-2 T sugar (add at the end of the cooking process)

Cheese Stuffed Meatballs
1 pound ground veal
1 pound ground pork
1 pound ground beef
1/2 cup italian breadcrumbs
1 egg
1 block mozzarella, cubed

Cooking Instructions
 

Spicy Marinara Sauce
1. Combine all liquid and seasonings (except sugar) into a large pot and bring to a simmer

 

2. While your sauce is simmering, brown your spicy ground sausage in another pan.
3. Once the sausage is browned, strain it and add to your sauce pot

4. In your sauce pot bring everything to a boil for about 3-5 minutes and then reduce heat to a low simmer.  The longer you simmer the better your sauce will taste (I simmered my sauce about 3 hours).

5. Before serving it with your spaghetti and meatballs make sure you taste the sauce.  If the sauce has an acidic taste (because of the tomatoes) that is where you will add the sugar.  Start adding the sugar 1 T at a time, and continue to taste throughout this process.
***TIP: this sauce also freezes really well too

Cheese Stuffed Meatballs
1. Pre heat your oven to 350 degrees F
2. Combine your veal, pork, beef, breadcrumbs, and egg into a large mixing bowl

***TIP:  remove all rings because it is about to get messy

 

3. Once your ingredients are in the bowl use your best kitchen tools to mix everything together, your hands.  Yes it feels nasty, but it is the best way to combine all the meats together for the best tasting meatballs
4. Once everything is combined roll your balls into golf ball size balls.  Before you’re done with your balls press a mozzarella cube into the middle and seal the meat around it.

5. Once all your balls are made heat olive oil in a sauté pan over medium heat.
6. Brown your meatballs and set aside onto a plate until all are browned.  By browning the meatballs it helps lock in all the moisture so you don’t end up with a dry meatball.

 

7. Now it is time to bake them…pour 1-2 cups of your spicy marinara sauce into a 8×8 casserole dish.

8. Place the balls onto the sauce in the casserole dish and bake for 30 minutes.  Half way through the baking process flip your balls so they cook evenly.

9. After 30 minutes of baking, removed your balls and serve them over your spaghetti and spicy marinara sauce.

10. Enjoy!!!
