Oven Roasted Potatoes
Cooking Time: 60 Minutes; Yields 2-4 People
Ingredients
30-40 fingerling potatoes; halved
5-6 sprigs thyme; leaves only
salt and pepper
olive oil

Cooking Instructions
1. Start by pre heating your oven to 425 degrees F and find a 8×8 pan
2. Half all of your small fingerling potatoes and place into the pan.
3. Coat the potatoes with olive oil, sprinkle with thyme leaves, salt and pepper. Give everything a big toss so all the potatoes are coated evenly
4. Place the potatoes into the oven and cook for 60 minutes or until fork tender and golden brown.
***TIP: After 20 minutes in the oven give the potatoes a toss to keep them from sticking to the bottom of the pan, and to allow the potatoes to brown on all sides while roasting.
5. This is a great side dish but also pairs wonderfully with my “perfect roasted chicken” recipe. It also is a super affordable meal…this side only cost about $6-$8, perfect for an affordable date night!
