When I was at the lake (Lake of the Ozarks in MO) I never wanted a huge breakfast. Being out in the sun all day really decreases my appetite, but I wanted to make sure I got enough nutrition. So this is what I had most mornings!
This may look basic but it is very flavorful, so lets start out by toasting your bread in the toaster.
While your bread is toasting place a small sauté pan over medium heat with about 2 T of olive oil. Also slice your avocado in half, scoop out the side without the pit, and mash it. To the mashed avocado add garlic powder and salt. ***TIP: Store the other half with the pit still attached in a zip lock bag. By keeping the pit with the avocado half it will keep it from turning brown.
By now your toast should be done toasting. Place it on a plate and top with your mashed avocado mixture.
Your pan should also be warm, so crack your egg into the pan. Add a pinch of salt and pepper to the egg.
While cooking the egg you can either flip it to finish the cooking process on the other side, or place a lid over the sauté pan and steam the top. Either works when making an over easy or over medium egg.
Now that the egg is done, just place it on the avocado mixture. There you have it avocado toast!!! I hope you enjoy this as much as I do!
