Energy Balls
This is something that is wonderful to have during the craze of everyday life! I make two batches…one with dark chocolate and one with dried blueberries. You can’t go wrong with having a healthy to go snack on hand!

Instructions
  1. These are so incredible easy to make, and so nice to have on hand during a crazy week or holiday season.
  2. Start out by finding a medium size bowl. Add all ingredients into the bowl (peanut butter, oats, flax seed, honey, and dark chocolate). ***TIP: do the exact same if making the dried blueberry balls.
  3. Find a baking sheet and line it with parchment paper or a silicone mat used for baking. You want to grab this and have it ready before getting your hands dirty!
  4. Ok….time to get down and dirty. You can try to mix these ingredients up all day with a spoon, but it will take you FOREVER!!! Wash your hands (make sure they are nice and clean) and then stick them in that bowl and start mixing.
  5. Once everything is nice and combined, roll into small balls. ***TIP: Mine are normally about a golf ball size. You can always go smaller if you want.
  6. After all your balls are rolled out and placed on the baking sheet, refrigerate for at least 15 minutes. Also store in the refrigerator.
  7. I hope these little babies work well for you. I find myself grabbing one at 5:45am before I head into the hospital. It starts my 12 hour shift off nicely…and I don’t get hangry before lunch!! Enjoy!!!
