Changing up your food "playbook"

Jerk Shrimp

Jerk Shrimp
 
Cooking Time 90 minutes; Yields 36 shrimp

Ingredients
1 pound shrimp, peel and deveined
1/2 cup veggie oil
1/2 habanero pepper, diced
1 T brown sugar
1 T fresh garlic, diced (about 3 cloves)
1 T fresh ginger, diced
2 tsp smoked paprika
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp kosher salt
1/2 tsp black pepper
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1 handful cilantro, chopped to garnish
6 wooden skewers, soaked in water

 

Cooking Instructions
 

1. In a medium metal bowl combine veggie oil, habanero pepper, garlic, ginger, brown sugar, smoked paprika, chili powder, garlic powder, onion powder, oregano, salt, black pepper, cinnamon, nutmeg, and allspice (***tip: when chopping habanero pepper wear a glove to protect hands from spice)

2. With the fresh shrimp, peel and devein it and place into the metal bowl with all the combined spices.
3. Cover the bowl with plastic wrap and marinade the shrimp for 1 hour in the refrigerator
4. Soak 6 wooden skewers in water so they don’t burn on the grill
5. Pre heat the outside grill, you can also cook inside on a cast iron if you don’t have a grill or its a nasty day outside
6. Skewer 6 shrimp to 1 wooden skewer to place on the grill
7. Place shrimp skewers on the grill, about 1-2 minutes on each side, or until the shrimp start to curl and have a color change
8. Remove the skewers from the grill and serve with coconut/cilantro/lime rice
9. Enjoy!!!
