Spicy Pickled Okra

Spicy Pickled Okra

 

Cooking Time 2 days; Yields 2 Quart Jars

Ingredients
Okra Mixture
1-2 pound fresh okra
1 quart white vinegar
7 T kosher salt
8 whole garlic cloves, peeled
2 whole jalapeños, just remove stem
1/3 cup (small spice container) whole mustard seed
1/3 cup (small spice container) whole dill seed
Sterile Canning Equipment
2; 1 quart jars sterilized in the dishwasher (don’t touch the bottom of the lids when removing from the dishwasher, if you touch anything but the sides it becomes unsterile)
1 large pot bring water to a boil (you will place both 1 quart jars in the boiling water to finish cooking so make sure it is a LARGE pot otherwise water will spill over onto the stove)
1 ladle sterilized in the dishwasher
1 funnel or a canning spout (thanks grandma); sterilized in the dishwasher

Cooking Instructions
 

Okra Mixture
1. Wash okra under cold running water and trim the stems if necessary
2. Soak okra in ice water for 1 hour

3. While the okra are soaking, peel the garlic cloves, remove the top/stem from the jalapeños and set aside until okra are done soaking
4. Mix mustard seed and dill seed into a small bowl so they are mixed thoroughly
5. With 30 minutes left of the okra soaking place kosher salt and white vinegar in a large sauce pan over medium heat.  Bring to a boil so you can ladle into canning jars
6. Now it has been 1 hours of soaking for the okra it is time to make you jars.  Equally separate the mustard and dill seed mixture between both jars, add 4 garlic cloves to each jars, 1 jalapeño per jar, and now fill with okra.
7. When the jars are packed full with okra add the warm vinegar mixture with your funnel and ladle, but leave 1/2 inch of head space in the jar.
8. Now this is very important.  Wipe off the rim if you dribbled vinegar on it otherwise keep the lid sterile and screw tightly onto the jar
9. Now you have this extra LARGE pot filled with water.  Bring it to a boil and place both okra jars, that are now sealed, in the water for 10 minutes

10. Once the ten minutes have completed remove the jars,carefully, and let them sit at room temperature for at least 2 days before eating
11. Enjoy!!!
