Ingredients
3/4 cup butter, room temperature
1 1/2 cup sugar
1 1/2 cup bananas, mashed (about 3-4 bananas)
2 eggs
1 tsp salt
1 tsp baking soda mixed in 1/2 cup buttermilk
2 cups flour
1 tsp vanilla
1/2 cup nuts (optional)
1 cup fresh blueberries
1. Heat the oven to 350 degrees; butter and flour your loaf pan
2. In your mixer on medium speed cream together butter and sugar
3. Add bananas, eggs, and salt to the butter mixture
4. Combine your buttermilk and baking soda into a measuring cup. It will almost double in size when combined so make sure you have enough room in your measuring cup.
5. Alternate your buttermilk/baking soda and flour into the banana mixture on medium low speed
6. Add vanilla to mixture
7. Now it is time to stir in the blueberries with a spatula not mixer. Before just stirring the blueberries into the batter sprinkle them with flour. It will keep the blueberries from sinking to the bottom when baking.
8. If adding nuts stir in with a spatula too
9. Pour bread mixture into loaf pan and cook until the center is firm and the sides pull away from the pan
