Mocktail Mix
- 8 cups watermelon cubed
- 2 cups coconut water
- 1 lime juiced
- 1.5-2 cups jalapeño simple syrup see recipe below
- 1 bunch mint chopped or muddled
- 1-2 shots per drink vodka optional to make into a cocktail

- Before one of Tanner's football games I wanted to make a mocktail mix for the ladies and families tailgating. Not everyone drinks so I figured this would be the best option. If you wanted to drink the jalapeño watermelon mix without alcohol it is delicious, but if you wanted to calm your nerves before the game just add a little vodka.
- We are going to start with our jalapeño simple syrup. In a small sauce pan over medium to medium high heat add 1 cup water and 1 cup sugar. Bring to a boil and stir frequently so the sugar doesn't burn. Once it comes to a boil and your sugar has dissolved; add your two sliced jalapeños. Kill the heat and place a lid on the sauce pan for 15 minutes or until cooled. ***TIP: Don't forget to remove the jalapeño peppers after it has cooled
- Now that your jalapeño simple syrup is done lets make the drink. Add watermelon, coconut water, jalapeño simple syrup, and lime juice to a blender. Blend until the consistency is very smooth and almost frothy (20-30 seconds). ***TIP: I have to half the recipe when blending because it all won't fit in my blender at once.
- To serve chop or muddle a handful of mint and place in the bottom of a large pitcher. Pour the watermelon mix over the mint. Serve immediately with ice or place in a sealed drink container (no ice) and chill for up to one day.
- To serve as a cocktail instead of a mocktail...take a solo cup of choice (because we all know I drink these while tailgating). Add 1-2 handfuls of ice. Add 1-2 shots of your vodka of choice...I like Ketel One Vodka but if you want to keep it gluten free use Tito's Vodka (it's a potato based vodka). Finally pour the watermelon mocktail mix over the vodka.
