Pumpkin Special K Bars…Yes I said Pumpkin!

  • 6 cups pumpkin special K cereal about 1 box
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup corn syrup
  • 12 oz milk chocolate chips
  • 12 oz butterscotch chips
  • non stick cooking spray I like butter pam or coconut pam

  • 6 cups pumpkin special K cereal about 1 box
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup corn syrup
  • 12 oz milk chocolate chips
  • 12 oz butterscotch chips
  • non stick cooking spray I like butter pam or coconut pam
Instructions
  1. Start out by spraying a 9x13 pan with non stick cooking spray. If you do the measurements shown above the bars will be thinner than the picture. I actually doubled the my pumpkin special K cereal, peanut butter, sugar, and corn syrup to make the bars thicker. I personally like this but Tanner doesn't. I just didn't want to mislead you in my photo.
  2. Ok, so your pan is now sprayed. In a large mixing bowl add your cereal and peanut butter.
  3. To a sauce pan over medium heat add your sugar and corn syrup. Bring this mixture to a boil and then pour over the cereal and peanut butter. Mix everything thoroughly.
  4. Pour your sticky cereal mixture into the 9x13 pan, and press down onto the mixture. This will make sure the bars stick together properly while forming.
  5. To top our bars melt chocolate chips and butterscotch chips together. You can do this one of two ways...in a double broiler so the chocolate doesn't burn OR use a microwave safe bowl in 30 second intervals. I personally like the double broiler concept but do whatever works best for you.
  6. Once all the chocolate and butterscotch has melted pour over the cereal bars. Smooth out with a spatula and refrigerate for 30 minutes or until the chocolate is hard.
  7. After the chocolate has hardened cut into bars and enjoy this fall treat!!! XOXO
