Ingredients
- 1 10oz frozen shelled edamame
- 1 avocado
- 1 lemon zest and juice
- 2 garlic cloves
- 1/2 tsp garlic salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
- 1 tsp kosher salt
- 1 head fresh cilantro
- 1/4-1/2 cup avocado oil
- 1 bag pita chips for dipping
- 1 bag bean and rice chips for dipping

- I just want to start out by saying I LOVE TO TAILGATE. I have put together a tailgate for every season my husband has played with the NY Jets (8 years). That being said, tailgate food isn't always the healthiest. This year I'm going to do my best to create new healthy tailgate foods, without sacrificing flavor! I made this for their green and white scrimmage and it seemed to be a hit, so lets get cooking!
- Start by adding water to a medium sauce pan, and placing it over medium high heat. Bring the water to a boil and then pour in the frozen edamame. You should boil them for about 4-5 minutes, and then rinse with cold water. ***TIP: instructions are on the back of the bag.
- While your edamame is cooking lets get all our other ingredients into a food processor. To the food processor add avocado, lemon zest and juice, garlic cloves, garlic salt, onion powder, pepper, kosher salt, and cilantro. Hold off on the avocado oil because we will drizzle that in later.
- After your edamame has finished cooking also add those to the food processor. Give everything a good blend before adding the oil.
- Finally turn your food processor on and slowly pour in the avocado oil. You can use as little as 1/4 of a cup to 1/2 of a cup, but keep pouring until everything is smooth and comes together nicely.
- Final touches...pour the hummus into a proper storage container. I also like to drizzle a little more avocado oil on top of the hummus too; but know that is totally optional.
- That's it!! You made a healthy but tasty new tailgating treat. Or, lets be honest maybe just a healthy snack one afternoon at home too! Enjoy!!!
